Ingredients

2 Cups Cooked Whole Wheat Pasta
1 Cup Broccoli (chopped)
1 Cup Cherry Tomatoes
1 Yellow Bell Pepper
2 Cloves of garlic (minced)
4 tbsp Extra Virgin Olive Oil
1/2 Cup Parmesan Cheese
1 Chicken Breast (Cubed)
Directions
1. Bring water to a boil and cook whole wheat pasta till desired doneness.
2. In the mean time: Heat 2tbsp of olive oil in a deep skillet on Med-High heat. Add the cubed chicken breast and cook until no longer pink inside.
3. Lower heat and add minced garlic. Let cook for a few minutes stirring to keep garlic from burning. Then add Chopped Boccoli, Cherry Tomatoes, and Yellow Bell Pepper. Turn heat back up to med-high and cook until vegetables are slightly tender and brighten in color. About 10 minutes.
4. Drain pasta and add 2 tbsp of Olive Oil and 1/2 Cup of parmesan cheese. Mix well to coat the pasta. Cover pasta in the chicken and vegetable mixture, serve warm.
