Number of Servings: 6

Ingredients

    1 c fresh, sliced mushrooms
    3 carrots, sliced
    2 small onions, sliced
    3 ribs celery leaves and all, cut into 1 inch pieces
    6 boneless skinless chicken breast halves
    1 tsp salt
    1/2 tsp black pepper
    1/2 c white wine
    1/2 tsp dry basil
    2 tsp dry parsley

Directions

1. Combine all vegetables in slow cooker. Lay chicken breasts on top.

2. Mix 1 c water, salt, black pepper, basil, parsley and wine. Pour over chicken.

3. Cover. Cook on high 4 - 5 hours.

4. To serve, place chicken on a platter and arrange the vegetables around the chicken. Serve the remaining broth on the side.

Makes 6 servings.

    Very Good
    Made this last night & it was perfect for me, hubby & baby. But alittle bland for my kids. It seems like a great way to get my veggies in, I did feel alittle hungry afterwards. Maybe add a salad and whole wheat bread to make it a meal.Thanks I will make again - 2/3/09
