Ingredients

    Olive Oil, 1 tbsp
    Onions, raw, 2.5 cup, chopped
    Garlic, 2 clove
    Ginger Root, 4 tsp
    *Coriander seed, 2 tsp
    Cardamom, ground, 1.5 tsp
    *Cumin seed, 1.5 tsp
    Turmeric, ground, 1 tsp
    Salt, 1 tsp
    Saffron, 1 tsp
    Lentils, 1 cup
    *Potato, raw, 2 large
    Carrots, raw, 1 cup, chopped
    Peas, frozen, 1 cup
    Chickpeas (garbanzo beans), .5 cup
    Vegetable Broth, 4 cup
    Pepper, black, 1 tsp

Directions

Heat oil-brown onions--10 min.
Add garlic, ginger, coriander, cardamom, cumin, tumeric, and salt
Saute 3 min
Add stock, saffron, and lentils-bring to boil-simmer 10 min
add potatoes & carrots-simmer 10 min. more
Add chickpeas and green peas-cook another 5 min.
add salt and pepper
Serve over rice
