Cool and refreshing - only 26 calories - no fat slushy/smoothie. This is loaded full of fruit & veggie, using cucumber, pineapple, and lemon. A cool twist of the normal yogurt drink. If you like cucumber, you will love this drink. You may add some sweetener if it is not sweet enough - although it tastes great without it. Ingredients

    Pineapple, fresh, .75 cup, diced
    Cucumber (peeled), .75 cup, sliced
    Juice of 1 Lemon squeezed
    Water, enough to blend (about .5 cup)
    ice cubes or crushed ice, a handful

Directions

Add pineapple, cucumber, squeeze juice of lemon in blender.
Add water and blend, add ice until right consistency.

Makes about 3 servings.

    I added a 1/4 cup silken tofu, 1/4 cup rice milk, and a frozen banana instead of the water and ice...a bit of protein, but still minimal fat...very refreshing. - 1/5/09

    I used frozen vanilla soy milk instead of the milk and ice. I was hesitant a little with the cucumber/lemon - It was wonderful! - 1/6/09
