Ingredients

    1/4 cup extra virgin olive oil
    1 1/2 pounds ground turkey
    1/4 cup chili powder
    4 teaspoons salt
    1 tsp cayenne pepper
    4 garlic cloves minced
    3 jalapenos, seeded and minced
    4 1/2 cups skinless turkey meat cooked
    1 can crushed tomatoes
    1 can tomato paste
    1/4 cup cilantro chopped
    1 can great northern beans drained
    1 can chili hot beans, undrained
    2 medium yellow onions chopped
    1 1/2 green red and or orange bell peppers chopped
    6 cups low sodium chicken stock
    shredded cheddar cheese and sour cream optional

Directions

heat oil. add ground turkey and cook 5 to 7 minutes breaking up with spoon. Stir in chili powded, salt and cayenne. Stir in garlic, jalapenos, leftover turkey, crushed tomatoes, tomato paste and cilantro. Stir in beans, onions, bell peppers and stock, heat to boiling over high heat. Boil 5 minutes. Reduce heat to medium, cook chili 7 minutes.
Transfer chili to 5 quart slow cooker cover and cook on high 5 to 6 hours.

    With the exception of the sodium, this looks like a terrific recipe. I would eliminate the 4 tsps. salt for starters. I think the fat and cholesterol ratings must be off too...nothing here to rate that high. I plan to try it and come back and rate it later. I love chili! Thanks. - 1/9/09
