Ingredients

1/2 cup orange juice
1 teaspoon canola oil
1 tablespoon Worcestershire sauce
1 garlic clove, sliced
1 pound of boneless, skinless chicken breasts
Cooking spray
1 10 ounce bag of romaine lettuce
2 11 ounce cans mandarin oranges packed in juice, drained. (reserve 1/4 cup juice)
Dressing
1/2 cup light Italian dressing
1/4 cup reserved mandarin orange juice
Directions
Combine OJ, canola oil, worcestershire sauce and garlic in a large bowl or large zippered plastic bag. Add chicken and marinade in refrigerator for 15 minutes
Remove chicken from marinade and broil until light brown (approx. 4 minutes on each side)
Cut cooked chicken in to cubes. In a large salad bowl, toss lettuce, chicken and mandarin oranges.
In a small bowl, whisk together italian dressing and mandarin orange juice.
Drizzle dressing over salad and toss well to coat.
