Introduction
This is one of my family's favorite recipies. We eat it all year around.The good thing about this recipe is that you can add any kind of vegetables or meat you like. I sometimes add carrots and pork. Ingredients

2 tbsp country crock spread
1 whole chicken Boiled and cubed
2 medium diced yellow onions
4 cloves of garlic diced
15 Roasted Anaheim chilis ( or 1 28 oz can of diced green chilis)
2 large tomatoes diced
3 cans Rotel Diced tomatoes with green chili and cilantro (or three cups)
6 medium potatoes diced
2 16 oz bricks of Colby Jack cheese shredded
approx 12 cups of water
salt to taste
Directions
makes 12 2 cup servings
Roast green chilis and dice.
In a large soup pot, melt butter and saute onions and garlic over medium heat.
When onions are soft, add green chilies and tomatoes. Simmer 10 minutes, stirring every minute or so.
Add chicken, potatoes, canned tomatoes, and water. Cook over medium heat until potatoes are done, 20 -30 minutes.
On very low heat, simmer about 60 minutes.
Add salt to taste.
Add cheese to soup at the very end, stir and serve.
