Introduction

An easy and delicious crockpot recipe that my husband and I both love! when you toast the bread melt the cheese on top of it then float the bread in the soup. Substitute butter with olive oil if you prefer, either way it is so yummy! To reduce the calories, use smaller pieces of bread and little or no cheese. Ingredients

    8-10 large onions
    1/4 cup butter or margarine
6 10.5 oz cans beef broth
    1.5 tsps Worcestershire sauce
    3 bay leaves
    10 slices French Bread, toasted
    Grated skim Mozzarella cheese

Directions

1. Saute onions in butter until crisp-tender. Transfer to slow cooker.
2. Add broth, Worcestershire sauce, and bay leaves.
3. Cover. Cook on low 5-7 hours, or until onions are tender. Discard bay leaves.
4. Ladle into bowls. Top each with a slice of bread and some cheese.

Makes 10 servings.

Note: For a more intense beef flavor, add one beef bouillon cube, or use home cooked beef broth instead of canned broth.
