Ingredients

    3 Tbsp butter
    1/3 cup chopped celery
    1/3 cup chopped onion
    ½ tsp dried thyme
    Salt and pepper to taste
    1 ¼ cups frsh bread crumbs
    2 Tbsp finely chopped fresh parsley
    2 pounds sea scallops, patted dry with paper towels and cut in half if large
    Lemon wedges, optional

Directions

Preheat the oven to 450ºF. In a large skillet heat the butter over medium-high heat. Add the celery and onion, and sauté until the onion starts to brown, about 4 minutes. Remove from the heat and add the thyme, salt, pepper, bread crumbs, crumbs and parsley. Toss to combine. Arrange the scallops in a single layer in a lightly greased shallow baking pan. Spoon the crumb mixture over the top. Bake at 450ºF for 15 to 20 minutes or until the scallops are done. If the crumbs start to get too brown, cover loosely with foil. Serve with lemon wedges. Serves 5 to 6.

    Very Good

    Very good! I didn't have the onion and garlic powder that the other recipes were calling for and I liked using the fresh ingredients -- I thought the thyme really worked well with the scallops. I also used 4C whole wheat seasoned panko & butter flavored spray oil instead of the butter. - 2/7/10
