Ingredients

    16 oz package of dry split peas, washed
    1 medium onion, diced
    7 baby carrots, chopped
    8 cups of 99% fat free chicken broth or water
    3 cloves garlic, minced
    1-2 tsp salt
    2 TBS ginger root, grated
    2 TBS curry powder
    1 tsp ground cumin
    1/4 tsp ground coriander
    pinch of cinnamon
    1/2 of 1 Louis Rich Turkey smoked sausage, diced (come in packages of two)

Directions

Saute onions and carrots in olive oil until softened. Add garlic and ginger, cook about 1 minute. Add spices and allow to become fragrant. Add water/broth and split peas. Allow to boil, then put on lid and simmer about 1 hour. While peas simmer, lightly brown smoked sausage. You can blend soup after cooking for smoother texture. Add sausge last. Serve with low-fat sour cream and fresh cilantro. Also good over rice.
