Introduction

We like this for a quick breakfast, but add a salad and you have a meal.

You can make it a head for company, and just reheat. so the day of is less stressful.

It freezes well by the slice, which makes for a quick breakfast on work/school days

Thawed slice can be microwaved for about 1 1/2 minutes.

My daughter calls this (and the brocolli cheddar quiche) Breakfast Pie.

Ingredients

    Pie Crust, frozen ready made
    2 Eggs
    2 Egg Whites
    1 cup 2% Milk
    10 oz frozen spinach, thawed, water removed
    1/2 onion, chopped
    1 cup chopped mushrooms
    8 oz Jarlsberg Lite Cheese, Shredded

    Season to your own taste, I use a bit of garlic powder and pepper.

Directions

Serving 1/8 of the pie, 1 Slice

Thaw spinach and remove water (spinach must be well drained).
*I use a cheese cloth and squeeze the water out. It helps to do this a head of time

Preheat oven to 350F

Thaw Pie Crust at room temperature.

Mix eggs and egg whites.

Brush some of egg mixture on pie crust/shell and prebake for about 10 mins

Chop and slice onion and mushrooms, saute, for about 3-4 mins until tender. I use butter spray to coat pan. This can be done a head of time as well.

Shred 8 oz of Jarlsberg Lite Cheese.

Mix Milk, Eggs and 1/4 of the cheese together

Mix Spinach, Mushrooms,onions and rest of the cheese together.

Place the veggie cheese mixture into the bottom of the pie shell

Pour egg and milk mixture over the veggie mixture

Bake at 350 for about 40-50 minutes until set.

Serve warm to hot, but not piping hot.
