Introduction

Simple healthy dessert that is easily adapted to whatever fruit, fresh or frozen that you have on hand. An extra dose of heart healthy Omega 3s from the flax meal. Number of Servings: 12

Ingredients

    6 medium apples, cored & sliced
    1 c cranberries, fresh or frozen
    3 medium peaches, halved, fresh or frozen

    Topping
    ------------
    1c rolled oats
    1/2c flax meal
    1/2c wholewheat flour
    1tbsp cinnamon
    1tbsp ground ginger
    1tbsp ground nutmeg
    2 tsp Splenda
    1/2c. applesauce, unsweetened

Directions

1. Preheat oven to 350
2. Mix fruit into a 9 x12 Pyrex dish.
3. Mix dry topping ingredients thoroughly.
4. Mix in applesauce.
5. Crumble topping over fruit.
6. Bake in oven for 20minutes or until apples are soft.
7. Cool and enjoy!

    I skipped the apples and cranberries and just made a peach crisp. But the comment is really about the topping. I liked that it subbed applesauce instead of butter, but the texture ended up really gummy. Still tasted good, but odd to chew on. - 8/12/07

    I made this with just apples & cranberries and the topping. It was much too tart. Next time I'll add stevia or sugar to the fruit mix. Now I have to figure out how to sweeten it up so we can eat the rest of it. - 11/3/10

    Very Good
    I made this with only the apples and cranberries (skipped the peaches) and I added some butter to the topping mix based on another reviewer's comment. It was a big hit with the family but next time I'd add some sugar to the apple-cranberry mix - 12/1/07
