Delicious and Tasty. While it isn't a diet food it just got a little healthier. We've substituted Healthy Request Condensed Cream of Chicken Soup for the regular soup. Delicious and Tasty. Ingredients

    Chicken
    Cream of Chicken Soup
    Chicken Broth
    Sour Cream
    Sauteed Onion
    Cilantro (to taste)
    Cumin (to taste)
    Garlic Salt (to taste)
    Shredded Cheddar Cheese
    Flour Tortillas

Directions

Combine soup, 3/4 can chicken broth, and sour cream. Set aside 1 cup. To the remaining mixture, add chicken, onion, and spices to taste. Add 1 cup of cheese. Place 2-3 T of mixture on each tortilla, roll, place in 9 x 12 pan. Add remaining chicken broth to reserved soup mixture and pour over enchiladas. Sprinkle remaining cheese over enchiladas. Cook at 350 degrees until bubbly

    Very good! I had run out of chicken broth so I poured off the juice of a can of chicken noodle soup... not much but at least something. I also used corn tortillas instead of flour.

    Thank you for trying it and for the vote! Way to be resourceful! My wife often substitutes Chicken Bullion for the broth and that also turns out quite well. The type of tortillas is left entirely to your personal taste. Enjoy!

    Incredible!
    Omg.. This was fabulous! I used the large can of shredded chicken(it was a spur of the moment thing) and added some red hot sauce. Had it all set and heated it after soccer My whole family loved it! The is a quick easy meal we will come back to again! Yum - 8/30/11
