Ingredients

3 chicken breast, cut into strips
2 tblsp cornstarch
1/2 cup low-sodium chicken broth
2 tblsp oyster sauce
2 tblsp honey
2 tblsp reduced-sodium soy sauce
1 tblsp dry sherry
4 cups string beans
2 tblsp canola oil
1 tblsp minced ginger
3 garlic cloves, minced
Directions
1. Combine the chicken with 1 tablespoon of cornstarch; toss well to coat and set aside. Combine remaining 1 tablespoon cornstarch, the broth, oyster sauce, honey, soy sauce, and sherry in a small bowl; set aside.
2. Bring a large pot of water to a boil; add the string beans and cook until crisp-tender, 3-4 minutes; drain.
3. Heat a nonstick wok or large, deep skillet over medium-high heat until a drop of water sizzles. Swirl in the oil, then add the chicken. Stir-fry until just cooked through, 3-4 minutes; transfer to a plate.
4. Add the ginger and garlic to the wok and stir-fry until fragrant, about 20 seconds. Add the broth mixture and cook, stiring constantly, until the mixture boils and thickens, about 1 minute. Add the chicken and broccoli and cook until heated through, about 1 minute.

This was yummy! I added a red bell pepper I needed to use up, and it added nice color and flavor. I also had to sub fish sauce for oyster and rice wine vinegar for sherry, and it was still good. Served over rice for dinner and having it with leftover quinoa today for lunch. Thanks for sharing! - 1/28/11
