Introduction

Ingredients

    1 1/2 cups all purpose flour
    1/2 t. salt
    2 t. Baking Powder
    1 c. plain, lowfat yogurt
    1 c. sugar
    3 eggs
    1 t. vanilla
    zest of 1 lemon
    1/2 c. applesauce
    1/2 cup orange marmalade
    1/4 c. plain, lowfat yogurt

Directions

Preheat your oven to 350 degrees. Use non-stick cooking spray either in your loaf pan or muffin pan.

Sift together the dry ingredients. Combine the yogurt, eggs, vanilla, zest of lemon, and applesauce together, mix well. Combine the wet ingredients with the dry.

Pour batter into loaf pan or muffin pan. Cook the loaf for about 45 min. the muffins 20-25 minutes.

While the cake is cooking combine the 1/2 cup of orange marmalade and 1/4 c. plain yogurt in a small sauce pan. Cook together on low heat until well combined.

After the cake is cooked. Allow it to cool for 5 min. than remove from pans. Poke holes in the top of the cake, drizzle the yogurt marmalade sauce over the cake. Enjoy!
