Ingredients

    1 tsp. paprika
    1 tsp. salt
    1/2 tsp. ground cinnamon
    1/2 tsp. ground cumin
    1/2 tsp. coarsely ground black pepper
    3 or 4 chicken breasts (boneless, skinless)
    2 tbsp. maple syrup
    1 tbsp. butter
    1 tbsp. dijon mustard

Directions

Preheat oven to 375 degrees. Coat a baking sheet with nonstick spray. Combine the paprika, salt, cinnamon, cumin and pepper into a bowl. Rub the mixture over the chicken breasts and place them on the baking sheet. Position the sheet in the upper one-third of the oven and bake 15 minutes. Meanwhile, combine the maple syrup, butter and mustardin a small saucepan over low heat. Cook , stirring until the butter melts and the mixture is well combined. Pour/brush it on the chicken breasts. Bake it in the oven for 30 minutes or until the juices run clear and the middle is no longer pink.
