Ingredients

1 lb Extra Lean Ground Turkey
1 Tsbp Olive Oil
Salt & pepper to taste
2-3 tsp dried herbs (Italian seasoning)
1 cup celery, diced
1 cup carrots, diced
1 cup onion, diced
1 c. reduced fat low sodium chicken broth
1 Tbsp cornstarch
Topping:
5 servings potato buds, make according to package directions using chicken broth & margarine.
Directions
In large skillet, heat oil on medium high. add turkey, salt, pepper & seasoning, cook until lightly brown & cooked through, about 10 minutes.
Preheat oven to 350.
Make mashed potatoes as desired (used potato buds).
Add vegetables to turkey and saute for about 10 minutes. Mix cornstarch into 1 c chicken broth, pour into turkey misture and stir until gravy thickens. Add additional chicken broth as desired.
Put turkey mixture into bottom of 9x11" dish, then top with potato mixture.
Cook in oven about 10-15 minutes or until potatoes start to brown.
