Ingredients

1 med onion
2 cloves garlic
1 med green pepper
1-2" beet
1 cup chinese eggplant, chopped
1-28oz. can diced tomato
1/2 tsp cayene pepper
salt to taste
Directions
saute onion in oil in heavy saucepan
add garlic
chop green pepper add to saucepan
peel beet, chop, add to saucepan
chop eggplant, add to saucepan
add canned tomato to saucepan
add cayenne pepper
add salt to taste
let simmer on stove for 30 min.
use as spaghetti sauce, on top of rice, or as vegetable side dish
