Introduction

Although this low-cal recipe is GREAT with just bananas, feel free to add sliced strawberries or any other kind of fruit as well! Nuts are also a delicious addition, just remember that the calorie count will go up a little per serving. Enjoy! Ingredients

    You will need 2 mini loaf pans (or one medium-sized one) sprayed with cooking spray.

    Dry Ingredients:
    3/4 Cup Flour
    1 tsp Baking Soda
    1/4 Cup Splenda
    1/4 Cup Sugar
    (You can also just use 1/2 cup of either...I find that mixing the two works best though.)
    Dash of salt

    Wet Ingredients:
    2 Mashed Bananas
    1 Tbsp Butter (I use Smart Balance, if you use regular butter, the calories do increase a bit-keep that in mind.)
    3 Tbsp Egg Beaters
    2 Tbsp Skim Milk
    1 tsp Vanilla or Rum Extract (whichever you prefer.)
    1 tsp Vanilla or Rum Extract

    Optional Ingredients:
    Fat Free Cool Whip or Redi-Whip are great toppings for this treat!

    In the picture of this recipe - the loaf on the left is made with strawberries, too, and is just to die for!



Directions

Makes 2 small loaves, or one medium-sized loaf, depending on the bakeware you choose to use. Makes 6 servings.

1) Preheat the oven to 350 degrees.
2) Mix all dry ingredients in a small bowl and set aside.
3) Place all wet ingredients in a large bowl and mix well.
4) Slowly add dry ingredients to the large bowl, and mix until all ingredients are well blended together.
5) Pour the batter into the sprayed mini loaf pans.
6) Bake for about 20-25 minutes.

*Baking time may vary based on the type of baking dish you use! I always use the 2 mini loaf pans, which are relatively shallow. So be sure to check on your loaf (or loaves) as they cook!*

    This is different, never thought of adding strawberries to banana loaf! I like the idea of using Splenda too. I've printed out this recipe & put it in my cook book also. For sure I am going to bake this loaf!! Thanks!! - 1/18/09
