Introduction

Very easy to make, and easy clean up with just one skillet. Very easy to make, and easy clean up with just one skillet.
Number of Servings: 4

Ingredients

    4 pork loin chops
    4 medium potatoes, cut into fourths
    4 medium carrots, cut into fourths
    1 medium onion, cut into fourths
    1/2 cup low sodium chicken broth
    Dash of salt
    Dash of pepper

Directions

Cut the fat off the pork chops. Spray some cooking spray on a large skillet, and brown the chops, turning once (about five minutes).

Add the chicken broth, potatoes, carrots, and onions. Add a dash of salt and a dash of pepper.

Cover and simmer for 30 minutes, until veggies are tender and pork is no longer pink in the center.

Makes four servings. To cut back on carbs, use only three potatoes.

    This was fast, easy & tasty & I will be making it again! I had low sodium beef broth open, so used that instead of chicken, but I'm sure it's fine either way. - 1/25/09
