Introduction

ok- the mexican beef and rice was too high in calories for some- so I made it over- for about 1/2 the calories- removed the oil, added add'l 1/4 cup of ff cheese, and a larger jar of salsa kept this from getting too dry. ok- the mexican beef and rice was too high in calories for some- so I made it over- for about 1/2 the calories- removed the oil, added add'l 1/4 cup of ff cheese, and a larger jar of salsa kept this from getting too dry.

Ingredients

    12 oz 93% lean ground turkey
    1 jar salsa- 15 oz
    1 1/2 cups brown instant rice
    1 cup chicken broth
    1/2 med onion, chopped
    1/2 c ff cheddar cheese

Directions

brown the onion and turkey in a non stick frying pan- no oil, so be careful not to burn
add salsa and broth, bring to a boil, add rice, stir, cover for 5 min
fluff rice, add cheese on top, cover for another 2 min.
I served this on a weight watchers bun- for an add'l 140 cal
