    This is a simple rendition of Arroz con pollo:
    1 bag yellow rice
    2-3 cans petite diced tomato
    2-3 boneless, skinless chicken breasts
    The recipe is flexible so that anything can be added to taste! For extra flavor, try assorted bell peppers.


Brown chicken in skillet, add rice according to package, cook until rice is tender, add diced tomatoes and serve.
Another suggestion: Make rice in separate dish and add once both rice and chicken are thoroughly cooked.
