Introduction

Super-fast and delicious vegan pancakes! Super-fast and delicious vegan pancakes!
Number of Servings: 8

Ingredients

    1 c whole wheat flour
    1 Tbsp sugar (evap. cane juice)
    2 tsp baking powder
    1/8 tsp salt
    1 c silk light (plain)
    2 Tbsp canola oil

Directions

Heat a skillet to medium-high heat.

Combine dry ingredients in a bowl and mix with a whisk. Add soymilk and canola oil, mix until smooth.

For 8 silver dollar pancakes, make each pancake a little over 2 Tablespoons of batter.

Flip when you see bubbles in the middle, or when the edges get stiff. Makes 8 one pancake servings.

    These were awesome! I haven't had good luck with vegan pancakes in the past and was hesitant to try again. I'm SO glad I did! I halved the recipe (just cooking for me) and added cinnamon-maple powder to the batter. Made 2 large pancakes. Topped with Earth Balance and maple syrup. YUM! - 11/14/11

    Super easy, quick recipe that tastes good. Did a couple substitutions/additions & still turned out good (replaced oil w/ 1/4 c. flaxseed, used 1/2 c. each of whole wheat & white flour, added 1 t. cinnamon & 1/2 c. walnuts) Thanks for the recipe! - 8/8/09
