Introduction
This can be made with just about any fruit you want. The main thing is to make it colorful. It's very versatile and so yummy. The recipe as written makes a LOT, meant to be taken to a gathering. The amounts of fruit are totally dependent on your taste, feel free to mix it up. Every time I make this I keep hoping I'll have leftovers for lunch the next day but the bowl always comes back home empty. This can be made with just about any fruit you want. Ingredients

1 can pineapple chunks
1 cup strawberry halves
1 cup blueberries
1 can mandarin orange segments
1/2-1 cup fresh cherry halves
1 cup seedless grape halves
1 apple cut into chunks (use a firm apple that is good eaten raw)
2 kiwi fruit, peeled and sliced into rounds
2 Tbsp whipped cream cheese
.5 Tbsp lemon juice
.25 tsp sugar or sugar substitute
Directions
Makes about 20 half cup servings.
Drain the pineapple and mandarin orange segments.
Cut the grapes in half. Chop the apple into 1/2 to 1 inch chunks. Cut the cherries in half and remove pits. Cut the strawberries in half, or into slices. Peel the kiwi fruit and cut into slices.
Mix all the fruit in a large bowl. In a separate bowl, mix the whipped cream cheese and lemon juice until smooth. This will be bitter. Gradually add the sugar or the sugar substitute until the bitterness is mostly gone. The sugar in the fruit will help with this as well. Add the cream cheese mixture to the fruit, stirring well so there are no clumps of cream cheese. Cover with plastic wrap and chill for at least 30 minutes.
