Ingredients

1 tsp olive oil
3/4 lb boneless skinless chicken breasts cut into strips
1/2 C chopped onion
2 cloves garlic minced
1 can low fat cream of chicken or mushroom soup
2/3 C water
3/4 C orzo
1 C shredded carrot
1/4 tsp black pepper
1 Tbsp chopped fresh basil leaves,plus
2 basil leaves cut into fine strips
1 tomato diced
Directions
1. Cook chicken until well browned in heated oil at med.high in large skillet. Add onions and garlic. Cook and stir for 3 min.
2. Add all other ingredients except for basil strips and tomato. Mix well and bring to a boil. Reduce heat.
3. Cover and simmer for 15 min. stirring occasionally
4. Add basil strips and tomato and stir to combine.
