Ingredients

10 oz raw peeled and deveined shrimp
1/2 tsp salt
black pepper
1/2 tsp cornstarch
3 large eggs, beaten
2 tbsp canola oil
4 cups cooked brown rice
3/4 c frozen peas and carrots, thawed
1 tbsp soy sauce
1 tsp sesame oil
Directions
1. prepare rice day before planning to cook this recipe to insure it isn't mushy.
2. toss shrimp with salt, pepper, and cornstarch in bowl. set aside for 10 min.
3. heat large saute pan. when hot add 1 tbsp oil and then add shrimp. cook for 30 seconds then turn shrimp and cook another 30 sec. remove from pan.
4. add beaten eggs to pan and cook as you would scrambled eggs. remove from pan
5. add remaining 1 tbsp oil and add rice cook for 2-3 mins then add in peas and carrots, shrimp, soy sauce and sesame oil. mix well and cook until heated through and shrimp is done.
Makes 4 large servings
