Introduction

Ingredients

    Small sweet potato, peeled and cut into wedges,
    About 1 tsp sunflower oil,
    Pinch of salt,
    Freshly ground black pepper to taste,

    For the dip;
    Tsp light creme fraiche,
    Tsp extra light Philadelphia,
    1 spring onion finely chopped or tsp chopped chives,
    Pinch salt
    Freshly ground black pepper to taste.

Directions

Drizzle the oil over the sweet potato, season to taste and roast in a preheated oven at about 200 degrees for 30 minutes or until tender.

In a small dish combine the ingredients for the dip mixing well. Serve with the wedges.
