Introduction

Ingredients

    1/2 cup Thai sweet chili sauce
    1/3 cup rice wine vinegar
    1-1/2 tsp sesame oil
    1/2 tbsp tamari (soy sauce)
    1/2 cup shredded carrot
    1 cucumber, julienned
    1/4 cup red onion

Directions

Mix wet ingredients in medium bowl to make dressing.
Add vegetables and toss, coating all vegetables in dressing. Let sit for a mininum of 45 minutes. Sitting overnight is even better.
Serve as a slaw or side dish to shrimp.
Approximately 3/4 c per serving.

    We had a party and I made this for the first time and everyone loved it. I will make it again. I used low sodium soy sauce. I let in sit over night in the refrigerator. It was so easy to make. Flavorful. - 10/31/07
