Ingredients

    1.5 cups quick cooking Oats
    1 cup whole wheat flour
    1/2 cup (7 tbsp) ground flax meal
    1 tsp baking powder
    1/2 tsp baking soda
    1/2 tsp salt
    1 tbsp ground cinnamon
    1/2 tsp nutmeg
    1/2 unpacked brown sugar
    1 large egg
    1/2 cup unsweetened applesauce
    1 cup non-fat milk
    1 cup blackberries (fresh or unsweetened frozen) (or raspberries or blueberries)

Directions

Preheat oven to 375
Mix together dry ingredients

Beat egg into brown sugar, add applesauce and milk.

Stir dry ingredients into wet ingredients until oats are wet. Add berries.

Spoon into muffin tin (12) and bake at 375 for 30-35 minutes or until inside cooked.

    Incredible!
    Great recipe. Super yummy, super easy and super healthy. I was a little short of flax so substituted with hemp seeds. Also used agave syrup instead of the brown sugar. - 2/9/10

    Very Good
    I accidentally cut the milk in half and they turned out okay but they baked in 20 minutes. Omitted the nutmeg. Will make again! : ) - 1/4/10
