Low fat, good carbs, protien, affordable. Use vegetable broth for vegans, good meat substitute for tacos and burritos, or add more broth for a comforting satisfying soup. Ingredients

    3/4 cup each of brown rice and dried lentils
    1/4 c. chopped onion, chopped
    1 small carrot chopped
    1 small stalk celery chopped
    3 cups broth (I use chicken, can use beef or vegetable as well)
    2 T - 1/4 cup salsa ( or use tomatoe sauce or canned tomatoes if prefered)
    salt, pepper to taste
    1/4 tsp garlic powder
    1/4 tsp cumin
    dash of cayenne pepper (to taste) if desired

Directions

rinse lentils and brown rice in a strainer, add all ingredients to pan, bring to boil, reduce heat, let simmer 45 mins to 1 hour. Stir once in a while. (Or you can bake in 350 degree oven for 45 mins to 1 hour to avoid scorching pan) unitl liquid is absorbed and rice is tender.

top with additional salsa if desired. serve as main dish with salad, or roll up in tortillas with cheese and lettuce.

    Definitely a stick to your ribs food! I made this in the crock pot over night. I didn't have brown rice so I used Lundberg Wild Blend and low sodium vegetable broth. I'll be making this again. - 6/22/11

    I had this for dinner last night and again tonight. It froze and heated very well. It is filling and the flavors are comforting. - 7/12/09
