Introduction

Ingredients

    8 cups low sodium chicken broth
    2.5 cups diced ham
    2-3 cups Lima beans (1 c. soaked overnight)
    2 large russet potatoes approx 4 c diced
    1 cup celery w/ leaves
    1/2 lg. onion

Directions

I cooked the lima beans for about an hour in the chicken broth w/ the ham. This gives the beans a really yummy flavor but you can used canned for a faster soup.
Saute the potatoes in a non stick pan sprayed w/ pam to get a little crispiness to the potatoes. Add the onion and celery and saute until onions are clear and potatoes begin to soften.
Add to soup and cook until potatoes are done.
Makes approx 12 - 1 cup servings.
