Great Dip served with Corn Chips or for a fancier presentation: Serve Dip in Corn Husks opened to shape of boats. Also great served on top of baked or broiled fish. Ingredients

    1 cup fresh corn kernels, cooked, or Jolly Green Giant low sodium corn
    2 tbsp cilantro, minced
    2 tbsp. red bell pepper - chopped
    2 tbsp. green onions, chopped
    3 oz. light cream cheese, softened
    2 tbsp light sour cream
    1 tbsp. mayonnaise
    1 tbsp. lime juice
    1 tsp. jalapenos, minced, or 1 tbsp. mild chili peppers, diced

Directions

Gently mash cooked corn kernels with fork. In a bowl, mix cream cheese, sour cream, mayonnaise and lime juice until blended and smooth. Add remaining ingredients and mix. Chill and serve with corn chips.
