Goes great with enchiladas! Goes great with enchiladas!

    2 C. long grain brown rice
    1 Tbl. olive oil
    1/4 C. chopped onion
    1 can diced tomatoes


heat oil in a pot. saute onions and rice until rice just starts to toast. ad tomatoes and cover he rest of the way with water. (brown rice is 1C. to 2C. water). season with salt and pepper and cover and cook for about 40 minutes or until fluffy.
