Ingredients

    1 stick butter softened
    1 c. sugar
    2 eggs
    2 ripe bananas mashed
    1 c. whole wheat flour
    1 c. all-purpose flour
    1 tsp. salt
    1 tsp. baking powder
    1/2 tsp. baking soda
    1 c. buttermilk
    1 tsp. vanilla

    Topping:
    1/4 c. brown sugar
    1/4 c. pecans, chopped
    1/2 tsp. cinnamon

Directions

Preheat oven to 400 degrees. Grease muffin pan or use liners. Beat together butter and sugar until light and fluffy. Add eggs, one at a time, beating well after each. Beat in bananas until smooth. Mix together flour, salt, baking powder, and baking soda. Alternately stir flour mixture and buttermilk into egg mixture until dry ingredients just moistened. Stire in vanilla. Do not overmix, should not be smooth. Spoon batter into cups, filling 2/3 full. Mix and sprinkle each with topping mixture. Bake until lightly golden, 15-18 minutes. Cool muffin pan slightly on wire rack. Remove from pan and serve warm or to grab on the go for the week!
