Ingredients

* Nature's Own Double Fiber Wheat Bread, 4 slices, cut into cubes (the original recipie calls for 8 slices, but I used 4, and it was fine. The calorie count is only for 4)
* Cream Cheese, Fat Free, 4 ounces (Room temperature)
* Apples, fresh, 1 medium skinned, cored, chopped (preferably fuji)
* Westbrae, WestSoy Low Fat Soymilk Vanilla, 1 cup, 1.25 serving
* Liquid Egg Substitute (Eggwhite), 1 cup
* Reduced Calorie Pancake Syrup, 2 tbsp
* Cinnamon, ground, .25 tsp
* *Splenda No Calorie Sweetener, 1 tsp
* I Can't Believe It's Not Butter, Original Buttery Spray (2 tbsp)
Directions
Preheat oven to 350.
Spray an 8X8 inch baking dish with nonstick spray. Place bread cubes along the bottom of the dish.
Sprinkle diced apple evenly over the bread.
In a medium-large bowl. combine all other ingredients (Cream cheese, soymilk, egg substitute, syrup, butter, cinnamon, and sweetener). If you like your french toast sweet, add extra sweetener.
Using a hand held mixer set to medium speed, mix until lump-free and smooth. Pour mixture over bread and apple.
Make sure bread is soaked in liquid mixture. If needed, toss lightly to coat.
Bake for about 45 minutes, until egg mixture is pretty firm and cooked through. (be sure not to overcook, as bread may burn.) Let cool slightly, and cut into quarters. If you like, serve with additional syrup for dipping. Dig in!
(I will try substituting low sodium bread and see how it affects the calories and other counts. I used double fiber wheat bread to make this more filling, but the sodium content went a little higher. I also used egg whites instead of the recommended eggbeaters, and used 2 tbsp of i can't believe its not butter spray instead of regular butter.)
