Ingredients

    3/4 cup chopped onion
    1 clove garlic - chopped
    1 medium green pepper - chopped
    1/2 c finely chopped celery
    1.5 tbs butter
    8 oz can tomato sauce
    1/2 c water
    1 bay leaf crushed (finely)
    1 tsp minced fresh parsley (I don't use fresh)
    1/2 tsp salt
    scant 1/8 tsp cayenne pepper
    7 oz frozen shrimp, thawed, rough chopped - I use large deveined, tail off frozen shrimp and just chop it in about four pieces
    1 cup cooked brown rice prepared without butter

Directions

It takes a while to chop all the ingredients - if you had a chopper it would take less time to prepare. Prepare brown rice - without using the butter - and set aside. In medium skillet, saute onion, garlic, green pepper, and celery in butter about 5 minutes, or until tender. Remove from heat; stir in tomato sauce, water, bay leaf, parsley, salt, and pepper. Simmer 10 minutes. Add additional water, if needed. Add thawed shrimp. Bring mixture to a boil; cook covered over medium heat 5 minutes. Serve over rice. Serves 2.
