Introduction

Ingredients

3 Chicken Breasts cut into pieces
3 fresh juicy Tomatoes
3 Onions sliced
2 TBS Curry powder
2 cloves Garlic
1 TBS olive oil
Salt and pepper to taste
1/4 cup water if needed
Directions
Chop chicken into bite size pieces and brown in olive oil. Remove chicken and cook onion and garlic until soft. Add curry powder and cook over low heat for a few minutes to bring out flavor. Add the chicken back in and rest of ingredients. If extra sauce is needed add in some water or you can substitute chicken broth. Cook until chicken is done and serve over brown rice.

I use a mix and mild and hot curry powders for a depth of flavor and then some spice.
