Introduction

Ingredients

Two 14.75 oz. cans red sockeye salmon
1/2 cup chopped onions
1 cup crushed saltine crackers
1-2 eggs
Directions
Preheat the oven to 375 degrees.
Open and drain the cans of salmon and put salmon in a large bowl. Take the bones out of the salmon. Pour in onions and crackers, and add egg. Knead together until about the consistency of a meatloaf. You may need one or two eggs (the nutritional info is based on using both eggs)
Spray a 12 muffin tin with cooking spray. Fill each tin with about an equal amount of the salmon mixture. Spray the tops of the patties with cooking spray and bake for about 15-20 minutes, until the tops are very lightly browned.
After removing from the oven, let the patties cool for a minute or two. To remove, run a butter knife around the edges. They should pop right out.
Makes 12 total patties. We like ours with lemon and some may like a light tartar sauce.
