Introduction

Yummy asparagus baked with Parmesan and olive oil! Yummy asparagus baked with Parmesan and olive oil!
Number of Servings: 4

Ingredients

    3 cups fresh asparagus
    1 Tbsp Extra Virgin Olive Oil
    1/4 c grated Parmesan
    salt and pepper to taste

Directions

Mix above ingredients together in a plastic bag to coat
Put on baking sheet for 10 minutes at 400 degrees

    I made this for the Easter family dinner, with no modifications to the recipe. My sister and I loved it; my husband didn't dislike it, but said he wished I'd baked the asparagus longer. So the recommended 10-minute baking time may need to be adjusted to your (and your guests') personal tastes. - 4/4/10

    The whole family loved this! I felt I could have reduced the oil by a quarter or so -- it seemed just a tad too greasy to me. I added a tsp of minced garlic to the sauce and ground some fresh salt & pepper over it after placing the asparagus on the baking sheet. The flavor was fabulous! - 7/19/11

    I love asparagus any way I can get it. In fact, I prefer it raw. However, this is one of the best cooked asparagus dishes I've eaten. I used a Parmesan Asiago blend with Thyme rather than plain Parmesan and it was a great choice! - 4/12/14

    So quick and easy! And absolutely DELISH! I've had asparagus from a can and in a soup... both times it was mushy and gross. This is still fresh and crispy! Yum! - 2/26/10

    Love asparagus! And so good for you. I'm always looking for a recipe that's over and above standard steamed asparagus. This recipe is an amazing variation that piques the palate of anyone who tries it! (add a sprinkle of chopped garlic/red pepper) Thanks Chef Meg. Glad to have you in my kitchen - 3/6/12
