    2 cans Chickpeas
    1/3 - 1/2 cup chickpea water
    2 tbs tahini
    2 tbs olive oil
    1 clove garlic
    1/3 cup lemon juice
    1/4 tsp salt

Directions

Add everything to the food processor. Mix thoroughly until smooth.

    You can substitute 2 tbsp dark sesame oil for the tahini and the olive oil, and increase nutritive value and decrease sodium by substituting fat-free sour cream or yogurt for the chickpea water. Good hummus though! - 2/20/09
