Ingredients

    1 Sweet Potato, baked,
    1 Egg Yolk
    1/4 cup Whole Wheat Flour
    1/2 teaspoon Salt
    1/4 teaspoon Pepper

Directions

Bake sweet potato and cool. Remove skin and mash. If you have a ricer, it gives the lightest results. Mix flour, salt, and pepper. Add flour mixture and egg yolk to sweet potato. Mix with fork until the dough comes together. Knead briefly. Take a small handful of dough and roll into a 1/2 inch rope. Cut into 1 inch lengths. Repeat with remaining dough until it has all been rolled and cut. Cook in boiling water or broth until they float. Serve in soup or with sauce of choice.
