Ingredients

    - Shredded or Cubed Simply Potatoes (Packaged in the refrigerator section of grocery store.
    - 1 cup (8 oz) fat free cottage cheese
    - 1/2 cup reduced fat sour cream
    - 1 tablespoon fat free milk
    - 1 teaspoon sugar
    - 1/2 teaspoon salt
    - 1/8 teaspoon garlic powder
    - 2 tablespoons sliced green onion
    - 1/2 cup reduced fat shredded chdder cheese

Directions

In a food processor, combine cottage cheese, sour cream, milk, sugar, salt and garlic powder. Process until smooth. Pour mixture into a large bowl. mix in potatoes.
Pour entire mixture into a 8X11 baking dish coated with nonstick cooking spray. Bake, uncovered at 350 degrees for 30 minutes. Remove and sprinkle with cheese. Bake 15 minutes longer or until cheese is melted.

Makes 6 servings.
