Ingredients

29 oz can Chickpeas
1 chopped potato, baked first
1 chopped tomato
1 chopped onion
juice of 1 lime
1 small chopped serrano pepper (remove seeds if you want less SPICE)
1.5T Chaat Masala
2T Tamarind Concentrate
3T sugar
1/4t black pepper
1/4c water
1/2c plain yogurt
1/4t Chili powder
2t Garam Masala
1/4c water
dash salt
dash sugar
Directions
Boil one medium or several small potatoes until soft, about 10 minutes.
Meanwhile, add about 2T Tamarind Concentrate (from an Indian grocer or the ethnic section of some grocery stores) to a microwaveable cup. Add black pepper, 3T sugar & 1/4c water and microwave just to a boil, 1-2 minutes. Watch it carefully! Tamarind is black and sticky and can stain your microwave bottom if it overflows. Stir and repeat until all sugar and Tamarind is dissolved. Set aside to cool.
Add a large can of rinsed chickpeas, a chopped tomato, the cooled, chopped potato, a chopped serrano pepper (remove seeds if you want a less spicy dish) & chopped onion to a large bowl. Squeeze a lime and sprinkle 1.5T Chaat Masala (another Indian spice mixture sold @ Indian grocers) over the top. When the Tamarind mixture is cool, pour this over the top, mix well.
Add 1/2c fat free yogurt, 1/4c water, 1/4t chili powder, a dash of salt & sugar & 2t Garam Masala to another cup & mix well. Drizzle this over the top before serving. Yum!
For a few extra calories, try finding Bhel Mix at the Indian grocer--a crunchy, Chex Mix-like stuff and sprinkle a couple of tablespoons of this over the top. Makes about 8 1cup servings.
