Introduction

I had a few ripe bananas in need of being used up so I decided to make a banana loaf with the ingredients I had on hand.

It is a very moist loaf and the bananas and apple juice add a natural sweetness. You can spread almond butter on a warm slice and it makes for a decadent, but healthy treat.

Ingredients

    2.5 small ripe bananas, smashed
    1.5 cup whole wheat flour
    1/3 cup oil
    1/3 cup apple juice
    1/4 cup agave nectar
    1/2 tsp baking soda
    1 tsp cinnamon
    1/3 cup almonds, sliced
    1/2 tsp vanilla


Directions

Makes 9 servings

Preheat oven to 350

Mix ripe bananas, flour, oil and apple juice until combined. Then add agave nectar, baking soda, cinnamon and vanilla and mix until batter is smooth. Finally, fold in the almonds.

Spray a loaf pan with nonstick cooking spray and pour in batter and bake at 350 for 45 minutes to one hour depending on how well your stove heats.
