Ingredients

    3 medium Potatoes, mashed
    1/3 c. 1% milk
    1 T. butter, salted
    1 can Pink Salmon, de-boned and de-skinned
    1 egg, beaten
    2 T. breadcrumbs, seasoned
    1/2 t. salt
    Italian seasoning to taste

Directions

Boil potatoes and mash, with milk and butter, until thick and creamy. Drain salmon and remove bones and skin. Mix salmon, beaten egg and mashed potatoes until blended. Add breadcrumbs, salt and Italian seasoning to taste.

Set oven to broil. Cover a baking pan with aluminum foil and spray foil lightly with non-stick spray. Form mixture into 4-5 inch patties on foil and broil until the tops are browned and the patties keep their shape. Remove from foil with a spatula (if patties stick, add more breadcrumbs or coat/roll each patty in breadcrumbs before baking).

Makes 6 4-5 inch round patties.

    Very Good
    I had canned sockeye salmon and the flavor was stronger than pink. The potato toned down the flavor nicely. I think I'll add potato from now on. Thanks. - 5/3/13
