Ingredients

    8 oz. diced cooked turkey or chicken white meat
    1 cup diced celery
    1/2 cup diced onion
    2 cloves garlic, minced
    l/2 cup plus 2 Tbs. low salt or homemade chicken broth
    1 cup 2% milk
    1/2 cup sliced black olives (60 grams)
    2 T. white flour
    1 tsp. curry powder
    1/4 tsp. salt
    sprinkle of white or pepper
    1/4 tsp. parmesan cheese
    brown rice


Directions

Heat teflon fry pan over medium heat. Add 1 Tbsp. chicken broth, celery, garlic and onions. Saute adding another Tbsp. chicken broth if the pan becomes dry. Remove from heat.

In a jar with a lid, shake 1 cup milk, 1/2 cup broth, 1 tsp. curry powder and 2 Tbsp. flour. Pour into pan and return to heat stirring until thickened. Add white pepper and salt to taste. Fold in chicken and olives. Heat through. Serve over brown rice (you will have to count the calories for rice separately - not included in the above recipe) and sprinkle with 1 tsp. parmesan cheese. Makes 4 servings.

You can also make this filling into crepes. Fill each crepe, place into oiled baking dish, sprinkle with parmesan cheese. Bake at 350 degrees for 20 minutes.

    This is a great recipe. My wife has made this for us for years. I like more curry. You will never even notice that there isn't any added fat. The kids always loved it made in crepes. - 3/25/07
