Ingredients

    1 lg. baking potato, peeled and thinly sliced
    1 pound asparagus, trimmed andcut into 1/2" pcs.
    4 large eggs
    4 egg whites
    1/2 c. fat-free milk
    4 Tbsp.shredded lowfat Mozzarella cheese
    1/2 tsp. salt
    1/4 tsp. baking powder
    1 medium onion, chopped

Directions

Makes 4 servings

Preheat oven to 500 degrees.
Place the potato in a saucepan and add water to cover by 3 inches. Cover the saucepan, bring to a boil over high heat; boil 5 min. Add the asparagus and cook 2 min. longer. Drain and set aside.

Combine the whole eggs, egg whites, milk, 3 Tbsp. of cheese, salt and baking powder in a bowl. Mix in the potato and asparagus.

Spray an ovenproof non-stick skillet with non-stick spray, set over med. heat. Add onion and cook stirring occasionally - about 2 min. Add egg mixture, reduce the heat to medium. Cover and cook till almost set. Sprinkle with remaining 1 Tbsp of cheese and transfer to oven. Bake till frittata is cooked through and the cheese has browned. about 5 minutes. Invert onto a plate and cut into four wedges. serve...

    Very Good
    Good tasting. Two minor changes to improve nutrition: (1) don't boil asparagus - saute it with onion (or steam quickly in microwave with barely tsp water) to retain vitamins AND (2) salt is unnecessary (especially if watching sodium).
    You can also easily vary flavor by adding seasonings of choice.

    Incredible!
    Fantastic! Turned out very yummy! But I must say I should have cooked it on the stove a little longer because it took longer than 5 minutes to cook in the oven. Still turned out yummy! - 7/23/09
