Introduction

Traditional quiche without all the fat, and some spinach thrown in for flavor and color. Really, you can add almost any veggies you want, including diced tomatoes, onion, or green pepper. Ingredients

    4 Large eggs
    2 Egg whites
    1/4 c. nonfat milk
    3/4 c. frozen spinach, thawed and drained
    1/3 c. 2% (lowfat) cheddar cheese
    1/2 c. Ground Turkey Sausage (the patty kind, not link), cooked
    1 9" regular (not deep dish) pie crust
    1/2 tsp. dried parsley
    salt and pepper (optional)

Directions

Preheat oven to 350 degrees Fahrenheit. Beat eggs and egg whites in a medium bowl until blended. Add all ingredients except the pie shell and stir until mixed. Pour egg mixture into pie shell (you may have a few tablespoons that won't fit), and bake for 15-20 minutes or until center is done. Allow to cool for about 5 minutes and then serve hot. Makes 6 servings.

    Love this recipe. I did add a bit of diced onion, a small pinch of minced garlic and chili flakes. Very good. Thanks for posting. - 1/29/11
