Introduction

Use Rock Fish or Cod.
This is very tastey & quick & easy to make!
Be sure to keep a watchful eye on it when it is on the upper rack under the broiler!

Ingredients

    4 - Filets of Rock or Cod Fish
    1/4 cup - Sun Dried Tomatoes (out of oil- packed jar)
    16 jumbo - Black Olives
    3 oz. - Hazelnuts
    3 oz. - Parmesan Cheese

Directions

In a food processor add Hazelnuts & pulse until course, add the Parmesan Cheese & continue to pulse until incorporated. Add Olives & Sun Dried tomatoes & continue pulsing until you have a course topping.
Put the fish filets on a tin foil covered cookie sheet & distribute the topping evenly over each filet.
Bake under the Broiler with rack in the middle to upper middle rack for approx. 4 mins. max. & then move it to lower rack for 3 mins. Enjoy!
Makes 4 servings - 1 filet each.
