Introduction

Packed with veggies, this dish is a great low-cal dinner for two served over whole-wheat pasta or spaghetti squash. If you have cooked chicken on hand, this dish is super-quick and easy. Ingredients

    1 tsp. olive oil
    1/2 c. onion, coarsely chopped
    1 c. sliced zucchini
    6 large mushrooms, sliced
    Salt and pepper to taste (if you like spicy Italian food, try adding red pepper flakes)
    6 oz. cooked chicken breast, cut into bite-sized pieces
    1/2 c. spaghetti sauce
    1/4 c. water

Directions

Saute onion, zucchini, and mushrooms in olive oil, adding salt and/or other spices as desired. When vegetables are tender, add chicken, spaghetti sauce, and water. Cook about 5 minutes more, until sauce has thickened. Serve over pasta or spaghetti squash.

    I didn't have mushrooms & my husband doesn't really like shrooms so I just doubled the zucchini & I LOVED it, but hubs thought it had too much zucchini-however he offered no alternatives, so next time I'll try 1/2 zuch-1/2 yellow squash? I LOVE vegetables so I'll be making this dish again! - 7/22/09
